ABSTRACT

THE usually accepted value for the amide nitrogen content of ovomucoid is 1.00 per cent1 or 21 residues per molecular weight of 28,800 gm. (ref. 2). This value was obtained by acid hydrolysis of the protein followed by distillation of the ammonia from mildly alkaline solution. It is known, however, that ovomucoid contains hexosamine and that the latter is deaminated to a greater or lesser extent by the methods used. It is thus likely that the reported values for the amide nitrogen content of ovomucoid, and those of other glycoproteins which have been determined by similar procedures, are too high. More... »
