ABSTRACT

Milk as an important source of calcium and protein provision for the human body, plays an inevitable role in worldwide food pyramid. This product in its industrial production process is contaminated with different contaminants such as antibiotics, hormones, parasiticides, pesticides, insecticides, heavy metals, and aflatoxin mold. The aflatoxin mold is a known carcinogen for animals and human with B2 category of carcinogenicity as per the international agency for research on cancer. In this article the systematic carcinogenic risk assessment of this toxin in raw milk is performed using a selection of existing numerous test results of different time periods in different cities of IRAN. The synergic effect of HPB infection and aflatoxin was also studied. It is concluded that due to the precautions and control measures in recent years, both the carcinogenic risk of AFM1 and the synergic effect with hepatitis B virus are low and not critical in Iran. Risk assessment of AFM1 in raw milk from different major selected cities of Iran has been performed.The carcinogen risk of milk aflatoxin in Iran was calculated in detail and seems negligible with the precautions done from years ago but still improvement in production shall be done.Synergic effect of hepatitis B virus infection with aflatoxin M1 has been considered in the risk basement. Risk assessment of AFM1 in raw milk from different major selected cities of Iran has been performed. The carcinogen risk of milk aflatoxin in Iran was calculated in detail and seems negligible with the precautions done from years ago but still improvement in production shall be done.
