ABSTRACT

An all-glass aeration tube and improved air-distributing apparatus are described for use in the Swift stability test or similar accelerated method of determining stability of fats.A procedure is described in which only one tube is required for each test sample. By this procedure, it is possible to carry out as many stability tests simultaneously on one standard apparatus as on three such units by the usual three-tube method.Observations on the use of adaptations of Wheeler’s method of determining peroxide values are reported.
