An experimental fermentor was designed to allow the regulation of the relative humidity of the circulating air. This air was first saturated with water at a defined dew point temperature. It was then possible to lower the relative humidity by raising the air temperature. The water activity of the solid-substrate was regulated after a waiting time which was determined by the water sorption properties of the substrate used. More... »
