ABSTRACT

Although the food industry can be regarded as a low-level polluter in comparison to many other sectors, there are significant opportunities for improving its environmental performance. This chapter first describes opportunities in the areas of air pollution, water pollution and solid and liquid wastes. It then goes on to discuss the ISO 14000 series of environmental standards. Particular emphasis is placed on ISO 14001 and ISO 14004, which form the core of the series. The former sets out the central requirements for an environmental management system (EMS) against which an organization is audited for ISO certification/registration. The latter contains general policy for formulating an EMS. Guidance on how to prepare an environmental management system is then given. Finally, the chapter presents a checklist to aid in the preparation of a preparatory review and register of environmental effects for food factories. More... »
