ABSTRACT

This technology relates to a method of producing light color lecithin from a lecithin-containing oil, such as crude vegetable oil. The method comprises heating the oil to a suitable temperature, contacting the oil with a peroxide solution, separating the lecithin precipitate from the oil and drying the lecithin.
