ABSTRACT

The invention provides a method of wine making which includes the step of inoculating the grape juice with a strain of Schizosacc­ haromyces malidevorans which is capable of at least substantially completely utilizing L-malic acid without substantial utilization of glucose under wine-making conditions. Strains of Schizosacc­ haromyces malidevorans having the above capability and a screen for identifying such strains are other aspects of the invention. More... »
