ABSTRACT

In the present study, several kinds of genetically modified lactic acid-producing yeast that has been made in the Toyota Central Research Institute (Saccharomyces serevisiae)It was of metabolic flux analysis. Specifically, reducing the fermentation by-products other than lactic acid, which is produced in order to increase the lactic acid yieldPDC(Pyruvate decarboxylase) 1/5 gene disrupted strain (Ishida, et. Al.,Biosci.Biotechnol.Biochem.,70,p1148-1153(2006)),LDH(Lactate dehydrogenase) multi-copy expression strain (Saitoh, et. Al.,Applied and Environmental Microbiology,71,2789-2792(2005).)It was subjected to analysis of such. Target recombinant yeast of these analyzes, significant growth inhibition as the lactic acid fermentation is a high yield has been observed.
